This study exposes the reasons that justify estimating the economic values of food safety attributes for organic tomato (Solanum lycopersicum). The central problem of the research was to understand the economic preferences of housewives in the municipality of Ecatepec de Morelos, Mexico, grouped into: norms, nutritional quality, control of food processes, information, and environmental pollution; and also to identify the choice that impacts the welfare of housewives. For this purpose, scenarios with different levels of food safety attributes in policies are analyzed through a choice experiment (CE). Results showed that the decisions of housewives regarding the implementation of a food safety policy were influenced mainly by the attribute: information.
